Recipe for Blueberry Muffins using Blueberry Conserve from Raureni
- 100g unsalted butter, 150 g flour, 1 pinch of salt, 1 teaspoon baking powder,
- 100 g sugar, 3 large eggs, some vanilla essence, 100 ml milk and our Blueberry conserve from Râureni
How to prepare:
Preheat the oven. Prepare muffin forms. In a bowl combine the flour, baking powder and salt. In a separate bowl combine the sugar and the butter using an electric mixer for 3 min until the composition is fluffy/smooth. Add eggs and vanilla essence until well mixed and then pour the milk slowly. Pour the wet ingredients into the flour mixture and stir until just combined.
Spoon the mixture into the muffin tray, filling each cup about 1/2 full. Add blueberry conserve and pour in the remaining mixture.
Bake for 30-40 minutes.
